Ingredients · 1 (16-ounce) carton plain fat-free yogurt · 1 cup chopped seeded peeled cucumber · 1 cup chopped seeded tomato · 1/2 cup minced red onion · 1/4 cup chopped fresh mint · 1 teaspoon ground cumin
Preparation Spoon yogurt onto several layers of paper towels; spread to 1/2-inch thickness. Cover with additional paper towels; let stand 10 minutes. Scrape into a bowl using a spatula; stir in remaining ingredients. Cover and chill 2 hours; stir before serving.
